Lemon Blueberry Snack Cake Recipe

Summer is more than half over and I cannot believe how fast time has flown by! Besides visiting friends and family, job applications/ interviews, I am also spending more time in the kitchen. To preface this, and all future food posts… I am not a chef. I can make very simple meals and I always prefer to bake rather than cook. My motto is “The less ingredients the better!” That being said, I do enjoy making something that my family enjoys. Plus, my kitchen at home is fully stocked so most baking is easy to do on a whim. I already had most of the ingredients for this recipe on hand so I was ready to try it! My mom came across this snack cake in allyou magazine and it looked both delicious and easy to make, a win in my book!

Overall this cake took me about one hour to make. Although the recipe was fairly spot on in regards to ingredients, its cooking time was extremely long. Instead of 50 minutes in the oven, I came to check on the cake after 25 and immediately pulled it out of the oven. The “after shot” above shows the cake after only 25 minutes, and it was cooked through completely. If I had let the snack cake bake for the total 50 minutes that the recipe suggested it would have burned! Luckily, however, the cake turned out perfectly and after only one day there are only two pieces left! Try out this recipe for yourselves and let me know what you think!
